There is nothing better than sunshine, great company and delicious food of the grill.  At least not tonight!  Use this easy gluten-free marinade on your favorite vegetables & enjoy your healthy veggies all summer long!

Gluten-Free Marinade for Vegetables
San-J Wheat Free Tamari Sauce
, small splash
Balsamic Vinegar, big splash
Extra Virgin Olive Oil, medium splash
Italian Seasoning (pictured: McCormick's)
Garlic - fresh, diced or powdered
Lemon Juice - tiny squeeze, to taste

Toss with Peppers, Onions, Zucchini, Mushrooms, Yellow Squash or your favorite Summer veggies.  Marinate for 5 minutes to 3 hours.

Mushrooms
- any kind you like
Red Wine to Cover
Splash of Olive Oil
Rosemary, fresh or jarred
Garlic - fresh, diced or powdered

Marinate Mushrooms for 30 minutes - 2 hours for maximum flavor.  Stir/Shake randomly to distribute flavor.  Grill or Saute to desired texture!

Saute vegetables on stovetop or wrap in foil to prevent burning and place in basket on grill for 7-15 minutes, to desired  level of crispness.

Tip:  Cut vegetables to similar size to ensure even cooking.  Add fast cooking items (pineapple, tomatoes) in the last few minutes. 

 
 
My favorite Sunday mornings = coffee, Sunday newspaper, church & homemade breakfast.  This Sunday, my fiance was SO excited to make us French Toast for breakfast, since I had delicious Udi's Gluten-Free bread.

The issue?
  No Milk! 

The solution?  warning, this is not organic, healthy etc.

Coconut Creme Coffee-Mate to the rescue!  Even better, gluten-free is called out on the label.

The Result?  Yummy, delicious gluten-free french toast with a tropical twist! 
The EASY Recipe:
Crack Eggs into bowl large enough to dip bread
Whisk Eggs
Add Coconut Creme or Coconut Milk, Whisk
Dip or Soak Bread in Mixture
Cook on a griddle or in a pan on the stove
Top with fresh coconut, fruit or your fave topping & ENJOY!

 
 
Once again, I cooked too many potatoes for Easter.  Sunday night I perused AllRecipes.com when I stumbled upon a new-to-me idea to aid in my gluten-free cooking: using instant potato flakes to thicken soups, sauces etc.  

This Cream of Potato Soup was a 5-star recipe so I gave it a shot.  The original recipe is here: http://bit.ly/bXWFBl & my substitutions are below for gluten-free, health & what I had on hand. 

The Verdict?  LOVE the ability to substitute potato flakes for flour/cream to thicken potato soups.  Using less flour & no cream made it much easier on the stomach & healthier than other recipes.  It was also VERY EASY!  I'd definitely recommend this recipe if you have extra potatoes laying around.

Gluten-Free Cream of Potato Soup - Easter Leftovers Style
  • *Ham leftovers, chopped
  • *Onions, chopped
    *1TB Bob's Red Mill Gluten-Free All Purpose Flour
  • *Pacific Gluten-Free Organic Chicken Broth (~4-6 cups)
  • *4 - 10 Potatoes, cooked, sliced or cubed
  • *1/2 c instant mashed potato flakes, or more to desired consistency
  • *Milk to desired consistency
    *Scallions
    **if desired, add garlic & other spices  - my potatoes were covered in rosemary, evoo & garlic

    Directions: 
    Saute Ham & Onions
    Create a Roux (http://en.wikipedia.org/wiki/Roux) with the pan grease & flour
    Add Chicken Broth, Heat to a Boil
    Stir in Ham, Onion, Potatoes & Instant Potatoes
    Simmer 30 minutes
    Add Milk
    Top w/scallions, shredded cheese & serve!

    I can think of nothing better on a cold rainy day than grilled cheese & tomato soup!  Today's dinner was prepared with two goals: speed and deliciousness, despite the lack of time.  Always take a second to add herbs & spices to your dishes, no matter how basic!  Your taste buds will thank you, I promise.

    Udi's Bread was again the star of the show, grilling up to a perfect golden brown.  I topped it with really great Cheddar from the deli, Garlic & Italian Herb Seasoning (rosemary, pepper, onion, sea salt, red pepper, parsley), fresh Tomatoes and Romaine to add a little color.
